Chef Jim is originally from North Olmsted, Ohio (Cleveland area) and has lived in Iowa since 2001. He graduated from Kirkwood Community College with a degree in Culinary Arts and a bakery certificate. He and his wife, Holly, previously owned & operated the Ladora Bank Bistro from 2014-2019.
Chef Jim’s menu there consisted of small eclectic shared plates menu meant to be shared communally among the table. Charcuterie plates, bulgogi beef bao (steamed buns), bacon-wrapped Medjool dates, red snapper tacos and angels on horseback (bacon wrapped scallops) were just a small sampling of his creations.
Chef Vido joined the Brau Haus in March of 2019. After working in a small kitchen with many limitations Chef Jim was running out of ideas of what he could do and was ready for a change. And what a change he got when he walked into the Brau Haus kitchen.
Chef has been taking the traditional German dishes and putting his own modern twists on them to elevate the whole menu to a new level. All of us here at the Brau Haus hope you enjoy his cuisine!
